White Bean Hummus

This is such a simple and easy dish to whip up and is great as an appetizer, sandwich or wrap spread, or lunch. The garlic and paprika give this creamy hummus a bit of a bite but my kiddos just love it and gobble it right up! We love it!


White Bean Hummus
1 can cannellini beans, drained & rinsed
Juice of 1 lime
2 Tbsp. tahini
1 clove garlic
2 Tbsp. olive oil
1/2 tsp. mustard
1/2 tsp. sea salt
1/4 tsp. black pepper
2-3 tsp. fresh thyme, roughly chopped OR 1/2 tsp. dried thyme
1-2 Tbsp. water (if needed)
Paprika

1. Combine all ingredients (except thyme, water & paprika) in a food processor and blend until smooth. Add thyme, and water if needed, and pulse until well mixed.
2. Pour hummus into a bowl and sprinkle with paprika. Serve with crackers, pita bread and/or veggies.


Even my almost-2-year-old loves it!
