Blueberry Breakfast Quinoa

I absolutely love quinoa! It is so simple to cook and is definitely a healthy food, and, the best part is, my kids love it too! I often use quinoa in place of rice or even oatmeal. Needless to say, this is a common food in our house :)

Blueberry Breakfast Quinoa
1 C. quinoa
2 C. water
1/4-1/2 tsp. salt
1 cinnamon stick
6 oz. blueberries
1/4 C. crushed nuts or sunflower seeds
1-2 Tbsp. honey
Almond milk

1. In medium saucepan heat quinoa, water, salt and cinnamon stick until boiling. Reduce heat to low, cover and simmer until cooked (about 15-20 minutes).
2. Remove and discard cinnamon stick, add blueberries and gently stir in. Dish into bowls, sprinkle with nuts or seeds, drizzle with honey, and add almond milk as desired.
