Black Bean & Mushroom Burgers

In continuation with "Meatless May" I present to you these easy and delicious bean & mushroom burgers. Even my 4 year-old gobbled them up! Enjoy!

Black Bean & Mushroom Burgers
1 15oz can black beans, drained & rinsed
8 oz. sliced mushrooms
1/2 onion, coursely chopped
2 garlic cloves
1 serrano pepper, seeded
1/2 C. oats
1 egg
1/2-3/4 C. cornmeal
Salt & pepper
Olive oil
8 burger buns
Toppings: baby spinach, tomato, avocado, etc.

1. Begin by heating large pan on med-high heat. Add half of the beans, the mushrooms, onion, garlic and pepper to food processor and blend until just a bit chunky. Add the oats and remaining beans and pulse until desired consistency.
2. Pour mix into a mixing bowl and add the cornmeal, egg, salt, and pepper.  Mix well.  Drizzle pan with olive oil and spoon mixture into pan, smooth out into burger shape and about 1/2-3/4" thick.  Cook for 5 minutes on each side or until browned. Remove and set aside and cook any remaining mixture. Serve as desired!
