Here is a wonderful alternative to a typical tuna (or chicken salad) sandwich! It is super simple to make and it absolutely delicious! Feel free to experiment with add-ins, such as relish, chopped nuts, grapes, celery, etc.
Whole wheat bread
1 15oz can chickpeas, drained & rinsed
1/4 C. vegan mayo (or regular mayo)
1 tsp. mustard
Salt & pepper
Desired sandwich toppings
1. Pour chickpeas into food processor and blend until chopped and you no longer see any whole chickpeas. Pour into small mixing bowl and add mayo, mustard, salt, and pepper and mix well.
2. Toast bread, if desired, and top with 1/3-1/2 of the mixture. Add toppings, slice and serve!
