Zucchini "Hashbrowns" with Cream Sauce
Zucchini Hashbrowns (fritters)
4-5 zucchinis, washed & grated
1 egg OR 2 Tbsp. ground flax + 3 Tbsp. water
1 green onion, finely chopped
1/3 C. flour
1 Tbsp. cornstarch
1/2 tsp. salt
1/2 tsp. pepper
Olive oil
1. Place grated zucchini in a colander and let sit 10 minutes then squeeze out remaining juice before placing in medium mixing bowl.
2. Add remaining ingredients, except olive oil, and mix well.
3. Heat large saute pan on medium heat and drizzle with olive oil.
4. Form mixture into 8 patties and add to hot pan, sprinkle with salt and pepper, cook 5 minutes on each side until browned. Remove from pan and place on plate lined with paper towels. Let cool for a few minutes while making the sauce.
-Makes 8 "hashbrowns"
p.s. My kids love hashbrowns, hence to title of this dish :) Oh, and I'm a southern girl and also love eating these with good ole' white gravy.
Citrus Cashew Cream Sauce
1 1/2 C. raw cashews
3/4 C. water
Zest of 1 lemon OR lime
Juice of 1/2 lemon OR lime
1/2 C. fresh basil OR 1-2 tsp. dried basil
1 tsp. mustard
Salt & pepper
