Mushroom Spinach Pasta


I love this dish! It is very simple, delicious, filling, and it takes under 30 minutes to make which is super helpful when you have hungry, whiny mouths to feed! The sauce is extremely simple and is much lighter than most pasta sauces, it's similar to a gravy so the dish is still creamy without using a drop of any dairy product. I hope you love it too!

Mushroom Spinach Pasta
2 Tbsp. butter
1/4 onion, finely diced
2-3 cloves garlic, finely minced
8 oz. mushrooms, washed & sliced
6 oz. baby spinach
Salt & pepper
1 Tbsp. dried parsley
1/2-1 tsp. paprika
2 C. vegetable broth
1/4 C. flour
3/4 box (1 lb.) penne pasta

1. Heat large pan on medium heat. Add butter, onion, garlic, mushrooms, and seasonings. Saute until mushrooms are beginning to brown. Add spinach and saute until wilting.
2. In separate bowl whisk together broth and flour until no clumps remain. Pour into pan and bring to a boil, reduce heat and let simmer, stirring occasionally, while you cook the pasta.
3. Drain cooked pasta, remove pan from heat and toss together. Serve!
