Healthier Cookies
3 ripe bananas, mashed
1/2 C. unsweetened applesauce
1 tsp. vanilla extract
1 1/2 C. old fashioned oats
1/2 C. all-purpose flour
1 C. shredded coconut
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
3/4 C. chocolate chips OR raisins

-Preheat 350 F & line baking sheet with parchment paper

1. Beat together banana, applesauce, and vanilla extract. Add remaining ingredients and mix well.
2. Drop by spoonfuls onto baking sheet, bake 15-20 minutes until lightly brown around edges. Remove from oven & let sit 2 minutes before moving to wire racks to cool.

-Makes about 24 cookies.
