Blueberry Muffins


I love muffins, they are light, fluffy, easy to grab & eat, and they are simple to make! These delightful blueberry muffins only take about 5 minutes to whip up and they are delicious! Enjoy!!!

Blueberry Muffins
1/4 C. vegan butter (or regular butter)
1/2 C. unsweetened applesauce
1/2 C. honey
2/3 C. almond milk or soy milk
1 tsp. vanilla extract
2 C. all purpose flour
1/2 tsp. salt
1 Tbsp. baking powder
6 oz. blueberries

-Preheat oven to 350 F & line muffin pan with paper liners

1. Beat together butter, applesauce, honey, milk, and vanilla extract until smooth.
2. Add flour, salt, and baking powder and beat until mixed. Fold in blueberries with a spoon or spatula. Fill muffin cups 3/4 full. Bake 30-35 minutes until slightly golden. Remove from oven and let sit 2-3 minutes before carefully moving muffins to wire racks to cool.

-Makes 12 muffins.
