Baked Black Bean & Spinach Burritos

We absolutely love these! They are so simple and are great for any meal, I enjoy eating them on-the-go while my kiddos play outside.



Baked Black Bean & Spinach Burritos
1 15oz. can black beans, drained & rinsed
1/2 C. frozen sweet corn
1 C. packed baby spinach, torn
1/2 C. shredded cheese (optional)
1/4 C. salsa
4 large flour tortillas OR 6 medium wheat tortillas

-Preheat oven to 375 F & line baking sheet with foil.
1. Combine all ingredients together (except tortillas) in small mixing bowl.  Place a couple heaping spoonfuls onto each tortilla and roll up burrito-style.
2. Spray foil with olive oil cooking spray then place burritos on baking sheet seam-side-down. Spray top of burritos with olive oil spray.
3. Bake for 30-40 minutes, flipping burritos after 15-20 minutes, until golden brown on both sides. Remove from oven and let cool at least 10 minutes before serving with guacamole and/or sour cream.

-Makes 4-6 burritos

p.s. To make your own very simple guacamole simply mash up 1 avocado with a fork and add a few spoonfuls of salsa.
