Simple & Soft Chocolate Chip Cookies


Happy September! Can you believe Fall is almost here?! We already have some leaves turning wonderful shades of yellow, orange, and red here. I love this time of year so much, and it's an especially great time to bake! I tweaked my usual chocolate chip cookie recipe in hopes of discovering a super soft, gooey cookie and I definitely found a winner! I hope you love these cookies as much as we do.


Simple & Soft Chocolate Chip Cookies:
1 stick butter, melted
1/2 cup white sugar
1/4 brown sugar, packed
1 large egg
1 tsp vanilla extract
Pinch of salt
1 tsp baking soda
1 1/2 cups flour
3/4 C semi-sweet chocolate chips

-Line a baking sheet with parchment paper or a nonstick pan liner and preheat oven to 350 F (375 at high altitude)
1. In a medium sized mixing bowl beat together the butter and sugars for a minute or two until smooth.
2. Beat in the egg and vanilla until just mixed.
3. Add the salt, baking soda, and flour and stir in with a spoon until just mixed - don't over mix. Then, stir in your chocolate chips until evenly distributed.
4. Scoop dough with a large spoon, roll, and place on baking sheet. For large cookies I typically fit 9 on a sheet, for smaller cookies you could do 12 and cook them a minute or two less.
5. Bake large cookies for 11-12 minutes. The top should begin to crackle a bit and a slight touch of golden brown around the edges is perfectly fine. Remove from the oven and let sit at least 5 minutes before removing cookies to a cookie rack to cool - I let mine sit for about 10 minutes, they are quite soft and will fall apart if you don't let them sit for a while after baking. Serve & enjoy!

*Makes about 18 large cookies and 24-26 smaller/regular sized cookies.*
