Double Chocolate M&M Cookies


Goodness gracious! It's been a very long time since I last posted! Life just gets busy, ya know? Kids in school and sports, community and church service activities, and we bought a house back in March! It's just been crazy! 

My whole family LOVES chocolate chip cookies so very much, and so do I, but one afternoon I was wanting something with more chocolate so I came up with this delicious cookies. And really, they are so very easy to whip up, you can have cookies mixed, baked, and cooled all within 30 minutes! Now, you don't have to add the m&m's if you don't want to, but sometimes just a bit of a crunch is absolute heaven. Let's get to the recipe, shall we?

Double Chocolate Chip M&M Cookies:
1 stick butter, softened
1/2 C. white sugar
1/2 C. light brown sugar, packed
1/3 C. baking cocoa powder
1 egg
1 tsp. vanilla extract
1/2 tsp. baking soda + 1 tsp. hot water
Pinch of salt
1 1/2 C. all-purpose flour
3/4 C. semi sweet chocolate chips
2-3 Tbsp. milk
M&M's (3/4-1 C. should do it)

-Preheat oven to 350 F (375 at high altitude) & line baking sheet with parchment paper
1. Cream together butter and sugars until well mixed.
2. Add cocoa powder, egg, and vanilla extract and beat on medium speed until just incorporated.
3. Add baking soda (mixed with hot water), and a pinch of salt and mix for just a moment.
4. Add flour and chocolate chips then beat on lowest speed, slowly adding milk, until just incorporated. The dough will be a little sticky but should not be runny.
5. Either pour m&m's into a bowl or onto a plate and press spoonfuls of cookie dough into them, or place the cookie dough onto your prepared baking sheet and press the m&m's into the tops.
6. Bake 8-10 minutes, until cookies have spread out a bit and are crackling on top. Remove from oven and let sit 2 minutes before removing to wire rack to cool.
