Triple Chocolate Cookies
What can I say? I LOVE a good cookie! My absolute favorite is good ole' chocolate chip but sometimes you just need a bit more chocolate in your life, am I right? These are simple and I absolutely love the results, perfectly crisp around the edges, soft in the center, nice and gooey from the melted chips, and wonderfully chewy. And, of course, they are simple and quick to whip up which makes them even better!
Triple Chocolate Cookies
1 stick butter, softened
1/2 C white sugar
1/2 C brown sugar
1 egg
1 tsp vanilla extract
Dash of salt
1/2 tsp baking soda + 1 tsp hot water
**Heaping 1/3 C cocoa powder
1 C all-purpose flour
1/3 C white chocolate chips
1/2 C semi-sweet chocolate chips
-Preheat oven to 350 & line a cookie sheet with parchment paper.
1. In a medium mixing bowl beat together the butter and sugars until creamy. Add the egg and vanilla extract then beat in.
2. Add the salt and baking soda (mixed with hot water) and mix until just combined then beat in the cocoa powder.
3. Add the flour and chocolate chips and stir by spoon until the batter is smooth and well incorporated. Drop by spoonfuls onto prepared cookie sheet. Bake 8-10 minutes until the tops are crinkled and the edges are firm. Let sit on cookie sheet for 2 minutes before removing to a wire rack.
*Makes about 24 cookies*
**Heaping = I did not level off the measuring cup, I wanted just a tad more chocolate this time around, it ended up adding about another tablespoon of cocoa.
