Light & Easy Curry Chicken with Spinach

Here is a VERY simple, and pretty healthy, version of curry chicken. Our family loved this meal and I know that you will too!

Curry Chicken with Spinach
1.5 lbs chicken, chopped
1 Tbsp. extra virgin olive oil
1/2 onion, finely diced
Salt & pepper
1/4 tsp. ground ginger
2 tsp. curry powder
1/3 C. frozen spinach
3 C. chicken broth
1 Tbsp. cornstarch
1/2 C. Greek yogurt, plain yogurt, or sour cream

1. Heat oil in a medium sized skillet, add onion and chicken. Season with salt and pepper and cook until chicken is browned and onion is translucent. In a separate bowl mix together broth and cornstarch.
2. Add remaining ingredients, except yogurt, to skillet and mix well. Bring to a low boil, reduce heat, and let simmer until thickened. Stir in yogurt just before serving.

*I prepare rice while the sauce simmers and it end ups cooking perfectly. I also served this dish with some Parmesan roasted tomatoes - slice a tomato, place on a baking sheet, sprinkle with salt and pepper, top with Parmesan cheese and bake until browned (350 F).
